Pancakes?
So yeah. In my cabinet of life skills, the shelf for cooking sits empty, dusty and looks pretty forlorn. I stink at cooking. Which is ironic, because I love to eat. So you think at some point, I would have done the math and realized that cooked food = food I get to eat.
Somehow I’ve muddled through the decades without this skill. It helps that I married a guy who cooks. (I swear, that had nothing to do with my decision.) But now, I have this high energy toddler who devours his food. So as a mom, I have to learn to cook. I can’t just feed the kid pizza every day. (Though really, I think that’d be kinda yummy)
Today, I noticed we had fresh pineapple. I spotted the mutligrain pancake mix, and was inspired. Pineapple pancakes!
I should have realized I was in trouble when I had to look at the instructions to figure out how to put together batter. I know most 8 year olds can probably make pancakes.
Undeterred, I grabbed the measuring cup. In a fit of genius, I even poured the ingredients back into the cup to measure out consistent portions in order to form a nation of perfectly symmetrical pancakes. (Okay, the instructions told me to use 1/4 cup, but I figured out to pour the batter back in all by myself)
Alas, I quickly discovered that a measuring cup doth not a pancake make. Inexplicably, as I poured the batter in, it just kept spreading out all over the pan. I guess I thought hundreds of years of pancake history would peer pressure the pancake into a perfectly symmetrical form. Instead, I stood over the pan, chasing the expanding square with my spatula to try to shape it into some semblance of a sphere.
Also, did you know you can burn pineapple? I didn’t. But you can. Trust me on this.
So, what did I learn today?
1. Pancakes don’t automatically come out round
2. If you want to make them round, pour a little bit of the batter into the pan at first. Then, slowly add more batter once you have an edge and can force your pancakes into shape.
And most importantly:
3. If you stick enough syrup on it, your kid will eat it anyway.
So, that was today’s adventure. Once I stay home, I hope to post more often. I’m going to fess up to the trials and tribulations of this whole stay at home mom thing. Hopefully, you’ll find it as interesting and entertaining, as I will.
